Wanzhou Grilled Fish is a kind of mala grilled fish originated from the docks of Wanzhou along the Yangtze River's Three Gorges. At the start, boatmen grilled fresh river fish over charcoal fire to ward off cold and dampness, then simmered it in a spicy numbing sauce. Instruction of Maoge Wanzhou Grilled Fish Sauce

 

 

Ingredients: 

  • 1kg Fish fillet
  • 5g scallion
  • 5g ginger
  • 3 scoops cooking wine
  • 100g vegetables oil
  • 180g Maoge Wanzhou Grilled Fish Sauce
  • 100g water
  • 10g coriander
  • 10g peanut
  • 500g vegetables oil ( optional )
  • 30g onion ( optional )
  • 30g Sliced lotus roots ( optional )

Instruction 

Step 1. Preparation

 
  1. Take about 1 kg live fish, remove the innards, and clean.
  2. Make a few gentle cuts on the back of the fish.
  3. Place in a bowl, add scallions, ginger, and cooking wine, and marinate for 10 minutes.

Step 2. Roast Fish

 
Cook the marinated fish until golden brown using charcoal grilling/oven baking/or deep-frying with 500g vegetables oil ( optional ) , then set aside for later use.

Step 3. Cooking Fish

 
  1. Pour 100g vegetable oil into the wok and heat.
  2. Add 180g Maoge Wanzhou Grilled Fish Sauce and stir-fry until nice smell come out.
  3. Optional: add 30g onion, 30g Sliced lotus roots and stir-fry until they are cooked medium well.
  4. Add 100g of water and bring to a boil.

Step 3. Ready to Serve

 
  1. Pour the stir-fried ingredients and sauce over the grilled fish, then sprinkle with chopped scallions, cilantro, and crispy peanuts.
  2. Ready to serve.
