
The eel must be washed with starch to remove the slime.

To prevent the eel from being fishy, add ginger slices or ginger water,

a generous amount of salt,

a bowl of cooking wine,

and a spoonful of ground white pepper.

Mix continuously, then rinse clean and drain.

Heat the wok and add oil.Add ginger and garlic and stir-fry until fragrant.
